Energy Bites

These little bars (cut to whatever size you want) are great for a quick snack, a pick-me-up between lunch and dinner, or a snack after sports!

All you need is a food processor and some measuring instruments (or a really good eye for estimating). Ideally, these are eaten cold - I keep my tray in the freezer. Also, the recipe below is the most basic one. Feel free to add hemp seed, flax seed meal, or vary the nut butter you use! If you make this recipe more than once, try offering your little one a couple of choices to mix in and see what they come up with!

Prep Time: 10 minutes

Freeze time: 2 hours

Ingredients -

  • 1/2 Cup peanut butter (Crunchy or creamy is up to you)

  • 2.5 cup of dates, soaked and pitted

  • 1/2 Cup dairy-free chocolate chips

  • 1 cup + 1/3 cup rolled oats

  • 5 tbs chia seeds

Directions -

  • To prep the dates, soak them in water for an hour or two - they will come right apart to get the pit out afterwards

  • Blend everything together. You may need to stop and fold the ingredients a few times before continuing to blend them.

  • Spread the mixture evenly onto a tray/flat dish

  • Freeze or refrigerate for about an hour

  • Eat as desired!
