Awesome Granola

This is one of my favorite things to make with my daughter.  It's simple and versatile. Omit the nuts or change them to something you prefer.  Let your child pick what dried fruit they want to add, there are so many possibilities with this one! This is one of many healthy meals for kids!

Preparation time: 10 minutes

Cook time: 20-25 minutes

 

Makes 7-8 cups

Ingredients

 

4 cups old-fashioned oats (do not  use quick oats)

¾ cup nuts (or substitute seeds if nut allergy)

¾ cup Pumpkin seeds

½ tsp salt

1 tsp cinnamon

½ cup pure maple syrup

½ cup grapeseed oil or extra virgin olive oil*

1 ½ teaspoon pure vanilla extract

½ cup dried cherries or other dried fruit

½ cup dried coconut flakes

 

Preparation:

Preheat oven to 350° F.  Combine first 5 ingredients in a large mixing bowl and stir to mix.  Add maple syrup, oil and vanilla, mix well to coat all pieces.  Line a rimmed baking sheet with parchment paper, then pour mixture onto the lined baking sheet.  Bake 20-25 mins*.   Let granola cool, and gently break it up.  Add coconut flakes and dried fruit.  Enjoy!  This granola will stay fresh for about 2 weeks at room temperature in a sealed container, or 3 months in the freezer.

*Olive oil has a lower smoke/heat point and will take less time than if you use grapeseed oil.
